Davidsonia Gin is Animus Distillery's riff on a traditional English sloe gin, with a distinctly Australian intensity and character. We’ve used native Australian Davidsonia Pruriens, a tropical sour plum from the temperate regions of northern New South Wales and Queensland, steeped slowly in our Macedon Dry Gin over many months. With a distinctive palate of sour plum, raspberry and feijoa rounded out by with the juniper, citrus and classic spice of our Macedon Dry Gin, this unique expression is exquisite neat, with a dash of soda and a squeeze of lime, or for a range of distinctive fruit-driven gin cocktails.
Barrel Aged Gin
Our limited release 2021 Barrel Aged Gin is made using a lemon forward Macedon Dry variation matured in oak seasoned with Cloud 9 Farm's latest Pinot Noir, before being finished in a new French Oak barrel.
The lemon and Christmas spice of our Macedon Dry respond beautifully to the oak and wine of the barrel, resulting in a complex flavour profile, smooth mouth feel and long finish. This long-awaited limited Barrel Aged release has been ageing gracefully in Kyneton for 20 months, developing hints of vanilla and caramel with an oak sweetness, perfect for sipping.
Released overproof at 55.9%, this very special release is perfect neat, on ice with a lemon zest garnish, or in a variety of cocktails.
